Sun-Dried Tomatoes

My Grandpa, Dominic Agosto, was a man of many talents: multilingual, a mason, musician, et cetera. He also grew thee best Roma tomatoes and sun-dried them. As a kid, I typically didn’t eat peanut-butter and jelly sandwiches, hardly ever actually. INSTEAD, like a weirdo, I ate an ungodly amount of what I called “sun-dried tomato” sandwiches.

I’d burst into my grandparents house and make a beeline to their kitchen pantry. As I whizzed by, my grandma would see me and say, “you know where they are” with a big grin on her face. I could hardly contain my excitement when a “sun-dried tomato” sandwich awaited me. I’ll have you know the sandwich was literally two pieces of toasted bread with the tomatoes in between, but to this day I will contest that it is probably better than any item at a Michelin starred restaurant.

Before my grandpa passed he taught my dad (who also has the greenest thumb ever) how to sun dry his own home grown tomatoes. This past July my dad then showed us the same process my grandpa had showed him. If you know anything about me, I can wax nostalgic. I tend to archive my life and the life of my loved ones often because I think it’s just so important. It’s important to know how things were done and remember important figures, all while creating your own memories. SO, being able to partake in this tradition with my dad and family was really special.
